Created by the Vancouver Aquarium, Ocean Wise has an affiliation with over 200 restaurants, markets, suppliers, and food services across the country, with everyone working toward providing ocean-friendly buying choices in an environmentally conscious world. Now in this beautiful ebook edition, The Ocean Wise Cookbook covers 40 varieties of seafood in 139 recipes from the country’s most renowned chefs. Find out which species are well managed and caught or harvested in sustainable ways; what are the best choices in your region; what matters in terms of farmed versus wild; when frozen may trump fresh; and what sustainability really means. With links to several how-to videos on how to fillet fish, and prepare crab, lobster and squid like a pro, The Ocean Wise Cookbook is a perfect ebook, connecting you to the world of sustainability like never before.
